In need of no-bake treat recipes this summer?


Hey, Reader!

Summer is well on its way, and we're having our first real heat wave this week, which is a real whiplash after our big trip a couple weeks ago—more on that below!

I'm working my way through 10+ pounds (about 5 kilos) of fresh-picked blueberries with a lot of recipe testing. Until I have those recipes finalized and ready to share, here are some of my favorite recipes that don't require your oven:


My Favorite No-Bake Recipes

My aunt Deb was known for her Special K bars! If you've never had them before, they're kinda like chocolate-covered peanut butter Rice Krispie treats with butterscotch. They're easy to make with just one bowl!

I came up with "Ritzy Fudge" a few years ago, and it quickly became a favorite bar for me to take to events. It's a quick 5-ingredient fudge topped with Ritz crackers and a drizzle of salted caramel!

One of my very favorite things to make with my ice cream maker, the base for pomegranate sorbet comes together in about 5 minutes if you use bottled pom juice!

My husband loves taking these protein granola bars to work for an easy snack. They're easy to make and more filling than you'd think with about 20 grams of protein per bar.

It can be a little messy, but it's really easy to make silky smooth, tea-infused truffles! You can use any flavored black tea you like; I used a rosy Earl Grey here.

  • Austin and I went to Alaska for our sixth anniversary!! We went kayaking, rode on the White Pass Railroad, ate WAY too much a totally appropriate amount of salmon, saw the most beautiful glaciers, and spent a day touring Denali National Park, where we saw bears, moose, caribou, golden eagles, porcupines, Dall's sheep—basically everything except Mount McKinley! Guess we'll just have to go back someday ;)
