Muffin pans aren't just for muffins!

Hey, Reader!\

Spring has officially sprung, bringing longer days (finally!) and lots of blooms 🌼

It's been a little quiet on my end because I've been hard at work on a new long-form YouTube video. If you want to see it as soon as I post it, make sure you're subscribed :)

Once I finish that project, I'm really excited to get back to sharing new recipes every week! I've been working on quite a few since last year, and most use a fruit that's almost back in season 🍓

Until then, if you've only been using your muffin pan to make muffins, let me introduce you to some of my favorite individually-sized desserts:

My Favorite Muffin Pan Recipes

I can't say no to these mini chocolate cheesecakes with an Oreo cookie crust. So now you won't be able to either ;)

You can make these mini cherry pies with fresh or frozen cherries! Just thaw frozen cherries overnight in the fridge, then follow the recipe as written.

Brent says that these classic vanilla cupcakes are "the best vanilla cake recipe out of the thousands on the internet" 🥹

My favorite double chocolate muffins are made with brown sugar to intensify the cocoa flavor and make the crumb super moist.

Behind the Scenes

A lightning strike in the sky at sunset near a pine tree
A stone-bordered garden bed with new plants
Camellia blooms on a black table
  • Austin and I went to Yosemite National Park at the end of March! We started our day hiking the Mist Trail up to Nevada Fall (gaining about 2000' of elevation 😅) and ended our day with a much easier hike to the Lower Yosemite Fall (pictured).
  • We don't often get thunder storms in Modesto, but there was a big one this week. I don't think I'd ever seen lightning at sunset before!
  • I made a little garden bed in the backyard for a cut flower garden 💐 I'm glad I was able to get the plants in the ground before the rain!
  • Our local Camellia Society held their annual Camellia Show last month 🌸 People submit the blooms from their camellia bushes for judging, and you can even buy rare varieties of camellias! I bought two that I couldn't pass up (...surprising no one lol).

May your April showers bring May flowers 💐

Happy baking!
Alyssa

P.S. If you make any of these recipes, it would mean the world if you leave a review of how the recipe turned out! It goes a long way to let others know it's a tried and trusted recipe 💛

A woman in a kitchen with a box for an ice cream maker

Happy Saturday! If you dread having to buy new minor kitchen appliances because it's hard knowing which online reviews you can trust, me too. That's why I started creating product reviews! For the last few years, any time I buy a new appliance, I take tedious notes and track everything I like and dislike about it over the next 6-12 months. I then compile all that information into a video, so you know if the product is actually worth purchasing. I bought a new kitchen appliance in September,...
