Recipes that DON'T require your oven

I've been sharing fewer recipes than usual this summer because I've been hard at work on a secret project 🤫

I finally see the light at the end of the tunnel, and I'm almost ready to share it with you all. (And before any of you get too excited, no, it's not a cookbook 😅)

Until then, these no-bake treats are my go-to when I'm craving something sweet but can't quite convince myself that it's worth turning on the oven. Because even though we have had much fewer triple-digit days this year than last here in California, it's still pretty hot out there!

My Favorite No-Bake Treats

My Aunt Deb's Special K bars are always a big hit, and they couldn't be easier! They're kind of like Rice Krispie treats, just made with a peanut butter base instead of marshmallow, then topped with a butterscotchy chocolate layer.

Save $7 by making a fancy latte at home! My lavender London fog uses Earl Grey tea, lavender syrup, and your milk of choice to make a floral iced latte in just a few minutes.

Homemade fudge + Ritz crackers + salted caramel = a perfectly sweet, salty, creamy, and crunchy dessert. I call this Ritzy fudge, and it never lasts long. (It's made over the stove, not in your oven, so it still counts as no-bake!)

And because hot weather is basically an excuse to eat ice cream, I'd be remiss if I didn't share at least one ice cream recipe with you. A reader was so impressed with this strawberry ice cream that she also tried making it with blueberries, and it turned out great!

  • Austin and I got to meet our new baby nephew last month in a little trip to southern California! Those little fingers 🥹
  • A new In-N-Out opened up near us, and we stopped by on opening weekend to celebrate, as one does.
  • I bought a bunch of new, tiny succulents and repotted some succulents I already had for a little ✨ living room plant refresh ✨
  • The zinnias I shared last month have been going CRAZY. This little (now kinda big) patch by our driveway makes me smile every time we walk or drive past it. I've already started saving some of the seeds from the spent flowers so I can do another patch on the other side of the driveway next year!

May your no-bake treats always pop right out of the pan (they will if you line with parchment ;) ).
